Close lid and lock. Set for 1 minute. When done, allow cooker to naturally release for 5 minutes, then quick release and make sure all pressure is released before opening lid. In a small bowl, mix cornstarch and remaining 1 T of water. Open cooker and set to "sear" again. Pour in cornstarch mixture, whisking continually until thick, about 1 minute. Allow to cool.
