Salmon with Cilantro-Lime Adobo
- 2 (5-oz) salmon steaks
- Sea salt and freshly ground black pepper
- 1 T olive oil
- 1 (4-oz) can chipotle in adobo
- 2 cloves garlic, minced
- 1 lime (juice only)
- 1 T agave
1 T olive oil
- 1 T hot water
½ t paprika
½ t cumin
- 1 T cilantro, chopped
Cilantro-lime adobo sauce
Open chipotle in adobo and remove 2 peppers. Remove seeds and dice peppers small
In a bowl, combine chipotle peppers, garlic, cilantro, olive oil, paprika, cumin, lime juice, agave, and hot water. Mix well; set adobo sauce aside.
Set to “SEAR” and add oil to pressure cooker.
Season salmon with sea salt and fresh ground pepper and place in cooker. Cook salmon for 2-3 min. until salmon is done, flipping halfway.
Remove and drizzle adobo sauce over fish or serve on the side.
