Atun a la Mexicana
- 2 cans tuna fish, drained
- 2 T vegetable oil
½ c onions, small dice
- 2 Serrano chilies, minced
- 2 c tomatoes, diced
1 sprig thyme
3 T fresh parsley, finely chopped
2 cloves garlic, minced
½ t oregano, dried
Freshly ground black pepper
- Add all ingredients to pressure cooker.
- Close and lock lid, set pressure cooker to "fish", adjust time to 4 minutes, and press "start/stop".
When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and check seasoning. Add salt and pepper, if needed.
Serve as a main dish or on tostadas. Serve hot or cold.
