Creamy Cheddar Soup

Ingredients
- 1 small onion, chopped
- 2 large pimentos, chopped
- 3T butter
- 3T all-purpose flour
- 1 1⁄2c chicken stock
- 1 1⁄2c half-and–half
- 3⁄4c grated sharp cheddar cheese
- Salt and black pepper, freshly ground, to taste
- Dash cayenne pepper (optional)
Directions
- In a medium sauté pan, melt the butter on Medium-High (375°F).
- Sauté the onions and pimentos for 5–7 min.
- Reduce the heat to Medium (275°F) and add the stock and the half and half.
- Once heated, gradually add the flour and cook for 2 min. or until raw flour taste is gone.
- Lower the temperature to Medium-Low (175°F). Add the cheese and stir until it is melted.
- Add the salt, black pepper, and cayenne pepper to taste.
