Glazed Baby Carrots with Mint

Ingredients

  • 2 lbs baby carrots
  • 4 T butter
  • ½ c water
  • ½ c brown sugar
  • Sea salt
  • Black pepper
  • 3 T mint, fresh, fine chop (garnish)

Directions

  1. Add all ingredients to pressure cooker.
  2. Close and lock lid, set pressure cooker to "steam/veggies", and press "start/stop".
  3. When done, quick release and make sure all pressure is released before opening lid.
  4. Carefully open lid and stir in mint.
  5. Check seasoning and add salt and pepper, if needed.
