Lamb Meatballs in Tomato Sauce

Ingredients
- ½ c panko breadcrumbs
- ½ c whole milk
- 1 large egg
- 1 t sea salt
- ½ c Parmesan cheese, grated
- ¼ c parsley, finely chopped
- 1 lb ground lamb
- 1 clove garlic, minced
- ½ yellow onion, small dice
- 1 (28-oz) can crushed tomatoes
- 1 bay leaf
- ½ yellow onion, small dice
- ½ t sea salt
Directions
- In a small bowl, combine panko and milk. Allow panko to soak in the milk; set aside.
- Add tomatoes, bay leaf, onions, and salt to the cooker. Stir to combine.
- In a large bowl, using a whisk, mix the egg, salt, Parmesan cheese, and parsley. Add the lamb, garlic, onions, and soaked panko. Mix well.
- Form lamb mixture into balls. Place meatballs in tomato sauce in cooker. Make sure meatballs are coated once in sauce.
- Cover with the glass lid. Set to "slow cook" and adjust for 4 hrs. Cook until the meatballs are no longer pink in the middle. Remove bay leaf. Stir before serving.
