Peaches with Agave

Ingredients

  • 4 peaches, peeled, chopped (4c)
  • 1 T water
  • 1 t vanilla extract
  • ½ T cornstarch
  • 1 T water
  • 3 T agave

Directions

  1. Set to "sear" and add chopped peaches, water, agave, and vanilla extract.
  2. Close lid and lock. Set for 1 minute.
  3. When done, allow cooker to naturally release for 5 minutes, then quick release and make sure all pressure is released before opening lid.
  4. In a small bowl, mix cornstarch and remaining 1 T of water.
  5. Open cooker and set to "sear" again. Pour in cornstarch mixture, whisking continually until thick, about 1 minute.
  6. Allow to cool. Remove and pour into canning jars. Follow canning directions.
