Ingredients
- 4 peaches, peeled, chopped (4c)
- 1 T water
- 1 t vanilla extract

½ T cornstarch
- 1 T water
- 3 T agave
Directions
- Set to "sear" and add chopped peaches, water, agave, and vanilla extract.
- Close lid and lock. Set for 1 minute.
- When done, allow cooker to naturally release for 5 minutes, then quick release and make sure all pressure is released before opening lid.
- In a small bowl, mix cornstarch and remaining 1 T of water.
- Open cooker and set to "sear" again. Pour in cornstarch mixture, whisking continually until thick, about 1 minute.
- Allow to cool. Remove and pour into canning jars. Follow canning directions.
