Ingredients
- ½ C coconut water
- 2 C raspberries
- 4 pitted dates
- 1½ T chia seeds
- ½ lemon, zested
Directions
- In jar, add coconut water, dates, and chia seeds, along with 1c of the raspberries.
- Using the plunger lid, pulse the mixture until berries break up.
- Add in the remaining cup of berries and lemon zest and pulse for 10 seconds.
- Place jam into a container and let cool and thicken in the fridge for 35 minutes.
- Serve and enjoy.
