Ingredients
- 1 T extra-virgin olive oil
- 1 yellow onion, small dice
- 4 cloves garlic, minced

¾ lb ground beef

¾ lb ground pork
- 2 T tomato paste
- 1 T onion powder
- 1 T garlic powder
- 1 t caraway seeds
- 1 t oregano, dried
- 1 t cayenne pepper
- 1 bay leaf
- 1 (28-oz) can diced tomatoes, with juice
- 4 c beef stock

1-½ c vegetable juice
- 1 T soy sauce

¾ c brown rice, uncooked
- 1 head cabbage, 2-inch cubes
- Sea salt
- Black pepper, cracked
- Parsley, rough chop (garnish)
- Lemon wedges (garnish)
Directions
Set pressure cooker to "sear" and adjust time to 10 minutes. Add oil. When hot, add onion and sauté until soft, then add garlic.
Add beef and pork to brown. When brown, drain fat and add tomato paste, onion powder, garlic powder, caraway seeds, oregano, cayenne pepper, and bay leaf. Sauté another 3-4 minutes.
- Add diced tomatoes with juice, beef stock, vegetable juice, soy sauce, rice, and cabbage. Close and lock lid, set pressure cooker to "soup", and adjust time to 15 minutes. When done, quick release and make sure all pressure is released before opening lid.
- Carefully open lid and check seasoning. Add salt and pepper, if needed. Ladle into serving bowls and top with parsley and squeeze lemon juice from wedge if desired.
