Turkey Breast in Cranberry Sauce

Ingredients

  • 1 lb cranberries, fresh
  • 1 orange, zest & juice
  • ¾ c sugar
  • 1 t cinnamon, ground
  • 2 T extra-virgin olive oil
  • 2 lbs turkey breast
  • Sea salt
  • Black pepper
  • 2 c chicken stock
  • 2 sprigs thyme
  • 1 sprig rosemary

Directions

  1. Set pressure cooker to "sear", add oil, and press "start/stop". As oil is heating, season turkey breast with salt and pepper and place in pressure cooker. Brown on both sides, about 3 minutes per side. Remove turkey breast and set aside. Drain oil and clean pot. Return pot to pressure cooker.
  2. Add cranberries, orange juice, and zest. Close and lock lid, set pressure cooker to "steam/veggies", adjust time to 1 minute and press "start/stop". When done, allow to naturally release for 10 minutes, then do a quick release and make sure all pressure is released before opening lid.
  3. Carefully open lid. Set pressure cooker to "sear", adjust time to 10 minutes, and press "start/stop". Add sugar and cinnamon and stir. Simmer sauce and stir to break down cranberries. Simmer 7 minutes. Add turkey breast back to pressure cooker along with chicken stock, thyme, and rosemary. Close and lock lid, set pressure cooker to "poultry", and press "start/stop".
  4. When done, quick release and make sure all pressure is released before opening lid. Carefully open lid, remove turkey to serving platter, and ladle sauce over turkey. Serve.
