Baked Chicken Parmesan

Ingredients
- 2 chicken breast, butterflied (to make 4)
- ¾ C panko bread crumbs
- ⅓ C Parmesan cheese
- 2 T extra-virgin olive oil
- ¾ C mozzarella cheese
- 1 C marinara sauce
Directions
- In a bowl, combine bread crumbs and Parmesan cheese.
- Coat chicken in olive oil and dip into the bread crumb mixture.
- Place chicken onto greased Baking Pan. Place onto the Cooking Rack in slot 1. Set Bravo to “Bake” at 450 ̊F to an internal temperature of 165 ̊F for 13-15 minutes.
- Using a handheld meat thermometer, insert into side of one of the chicken breasts. Check to see that an internal temperature of 165 ̊F has been reached.
- When done, carefully slide out Baking Pan with chicken from oven. Spoon marinara sauce over the cooked chicken. Top with mozzarella cheese.
- Slide Baking Pan with chicken back into oven and set to 450 ̊F for 3 minutes.
- When cheese has melted, carefully remove chicken breasts from Bravo and let rest for 3 min.
