Balsamic Beef Tips

Ingredients

  • 2 T extra-virgin olive oil
  • 1 onion, thin slice
  • 3 lbs beef tips
  • 4 cloves garlic, minced
  • 1 lb mushrooms, sliced
  • 1 c beef stock
  • ½ c balsamic vinegar
  • 1 T Worcestershire sauce
  • 1 T soy sauce
  • 1 T honey
  • ½ t red pepper flakes
  • Sea salt
  • Black pepper, ground
  • Cooked rice (for serving)
  • Parsley, rough chop (garnish)

Directions

  1. Set pressure cooker to "sear" and add oil. When oil is hot, add onion and sauté for 5 minutes. Add beef tips. Brown tips and add garlic and mushrooms. Sauté for an additional 3 minutes.
  2. While tips are browning, add beef stock, balsamic vinegar, Worcestershire sauce, soy sauce, honey, and red pepper flakes to a mixing bowl and whisk.
  3. Add sauce to pressure cooker and close and lock lid. Set pressure cooker to "meat/stew"and adjust time to 20 minutes.
  4. When done, natural release for 15 minutes then quick release to make sure all pressure is released before opening lid.
  5. Carefully open lid and check seasoning. Add salt and pepper, if needed. Ladle over prepared rice and top with parsley.
