Ingredients
- 2 T extra-virgin olive oil
- 1 onion, thin slice
- 3 lbs beef tips
- 4 cloves garlic, minced
- 1 lb mushrooms, sliced
- 1 c beef stock

½ c balsamic vinegar
- 1 T Worcestershire sauce
- 1 T soy sauce
- 1 T honey

½ t red pepper flakes
- Sea salt
- Black pepper, ground
- Cooked rice (for serving)
- Parsley, rough chop (garnish)
Directions
Set pressure cooker to "sear" and add oil. When oil is hot, add onion and sauté for 5 minutes. Add beef tips. Brown tips and add garlic and mushrooms. Sauté for an additional 3 minutes.
- While tips are browning, add beef stock, balsamic vinegar, Worcestershire sauce, soy sauce, honey, and red pepper flakes to a mixing bowl and whisk.
- Add sauce to pressure cooker and close and lock lid. Set pressure cooker to "meat/stew"and adjust time to 20 minutes.
- When done, natural release for 15 minutes then quick release to make sure all pressure is released before opening lid.
- Carefully open lid and check seasoning. Add salt and pepper, if needed. Ladle over prepared rice and top with parsley.
