Ingredients
- 8-10 chicken legs and thighs
- 2T oil
- 1 onion, sliced
- 5-10 cloves garlic, chopped
- 4 bay leaves
- Freshly ground black pepper
- 1T brown sugar

½c soy sauce

¼c rice vinegar

¼c apple cider vinegar
- 1c yellow rice

1½c water
For yellow rice
Directions
- Set to "sear" and add oil.
- When oil is hot, place chicken in and sear on both sides. Remove to plate. Set aside.
Add onions and sauté until soft.
- Add garlic and remaining ingredients. Bring up to a simmer.
- Return chicken to cooker.
- Close lid and lock. Set to "poultry" and adjust for 12 minutes.
- When done, natural release. Allow sauce to thicken. Afterward, quick release until all pressure is released.
- Open and serve chicken on top of cooked yellow rice.
