Ingredients

  • 8-10 chicken legs and thighs
  • 2T oil
  • 1 onion, sliced
  • 5-10 cloves garlic, chopped
  • 4 bay leaves
  • Freshly ground black pepper
  • 1T brown sugar
  • ½c soy sauce
  • ¼c rice vinegar
  • ¼c apple cider vinegar
  • 1c yellow rice
  • 1½c water

Directions

  1. Set to "sear" and add oil.
  2. When oil is hot, place chicken in and sear on both sides. Remove to plate. Set aside.
  3. Add onions and sauté until soft.
  4. Add garlic and remaining ingredients. Bring up to a simmer.
  5. Return chicken to cooker.
  6. Close lid and lock. Set to "poultry" and adjust for 12 minutes.
  7. When done, natural release. Allow sauce to thicken. Afterward, quick release until all pressure is released.
  8. Open and serve chicken on top of cooked yellow rice.
