Ingredients

  • 4 slices of bacon, small dice
  • 2 T butter
  • 2 onions, small dice
  • 3 c corn, fresh or frozen
  • 3 qts vegetable stock
  • 2 potatoes, peeled, small dice
  • 2 T cornstarch
  • 2 T water
  • 1 qt whole milk
  • 2 T parsley
  • Sea salt
  • Black pepper

Directions

  1. Set pressure cooker to "sear", adjust time to 10 minutes, press "start/stop", and add bacon. Cook bacon until crisp and add butter and onion. Sauté until onions are translucent.
  2. Add corn and sauté for an additional 2-3 minutes then add stock.
  3. Close and lock lid. Set pressure cooker to "soup", adjust time to 7 minutes, and press "start/stop".
  4. When done, quick release and make sure all pressure is released before opening lid.
  5. Carefully open lid and add potatoes.
  6. Close and lock lid. Set pressure cooker to "soup", adjust time to 4 minutes, and press "start/stop".
  7. When done, quick release and make sure all pressure is released before opening lid.
  8. In a bowl, mix cornstarch with 2T water.
  9. Set pressure cooker to "sear" and press "start/stop". Whisk cornstarch mixture into soup until liquid thickens.
  10. Add milk and stir. Add parsley and season to taste with salt and pepper.
  11. Ladle into serving dishes and serve.
