Ingredients
- 4 slices of bacon, small dice
- 2 T butter
- 2 onions, small dice
- 3 c corn, fresh or frozen
- 3 qts vegetable stock
- 2 potatoes, peeled, small dice
- 2 T cornstarch
- 2 T water
- 1 qt whole milk
- 2 T parsley
- Sea salt
- Black pepper
Directions
Set pressure cooker to "sear", adjust time to 10 minutes, press "start/stop", and add bacon. Cook bacon until crisp and add butter and onion. Sauté until onions are translucent.
Add corn and sauté for an additional 2-3 minutes then add stock.
- Close and lock lid. Set pressure cooker to "soup", adjust time to 7 minutes, and press "start/stop".
- When done, quick release and make sure all pressure is released before opening lid.
- Carefully open lid and add potatoes.
- Close and lock lid. Set pressure cooker to "soup", adjust time to 4 minutes, and press "start/stop".
- When done, quick release and make sure all pressure is released before opening lid.
- In a bowl, mix cornstarch with 2T water.
- Set pressure cooker to "sear" and press "start/stop". Whisk cornstarch mixture into soup until liquid thickens.
- Add milk and stir. Add parsley and season to taste with salt and pepper.
- Ladle into serving dishes and serve.
