Ingredients
- 2c Half & Half
- 5 egg yolks

Sea salt, to taste

1t vanilla extract
- 1/2c sugar
- Turbinado sugar for sugar crust, as needed
Directions
Press PRESET and use the START/PAUSE dial to select PRESET 44. Place baking tray into the unit in rack position 1. Press START/PAUSE to begin preheating. Once preheated, the unit will beep twice, display “Ready”, countdown for 10 seconds and then beep once to give you time to insert your food.
- Mix all ingredients and fill 4 ramekins equally with brulee mix. Open the unit. Place on baking tray, fill bottom of tray with water to just below top of tray. Close the unit to begin cooking (210°F combo, 90% steam) for 25 minutes, after which the unit will beep 3 times and display “End”.
- Open door, remove crème brulee ramekins, let cool, then refrigerate. When cold, sprinkle turbinado sugar over top of brulee, using a torch, melt sugar until golden. Serve and enjoy.
Recipe Note
Note: Crème brulee can be made up to 3 days in advance and refrigerated.
