Diced Potatoes

Ingredients
- 1 lb small potatoes, peeled, ½-inch dice
- 1 c water
- 1 t oil
- 3 T butter
- Parsley (garnish)
- Sea salt
- Black pepper
Directions
- Place water and oil into pressure cooker and place steamer basket with potatoes into pressure cooker.
- Close and lock lid, set pressure cooker to “potatoes”, and adjust time to 5 minutes. Press "start/stop".
- When done, quick release and make sure all pressure is released before opening lid.
- Carefully open lid and season potatoes with butter, salt, pepper, and parsley.
- Serve and enjoy.
