Enchilada Casserole

Ingredients
- 1 lb ground beef
- ½ yellow onion, diced
- 1 green bell pepper, seeded, diced
- 1 can kidney beans, drained
- 1 can tomato, diced
- 1 t chili powder
- Pinch of salt and pepper
- 1 c cheddar cheese
- 1 c jack cheese
- 6 flour tortillas
Directions
- Set pressure cooker to “sear” and brown beef, onions, and bell pepper. Add the beans, tomato, chili, powder, salt, and pepper. Bring mixture to a boil then remove.
- Layer tortillas, beef mixture, and cheese in pressure cooker. Continue this process until all ingredients are used.
- Set cooker to “slow cook”, cover, and cook for 4 hrs. Once finished, remove lid and serve.
