Ingredients

  • 1 lb ground beef
  • ½ yellow onion, diced
  • 1 green bell pepper, seeded, diced
  • 1 can kidney beans, drained
  • 1 can tomato, diced
  • 1 t chili powder
  • Pinch of salt and pepper
  • 1 c cheddar cheese
  • 1 c jack cheese
  • 6 flour tortillas

Directions

  1. Set pressure cooker to “sear” and brown beef, onions, and bell pepper. Add the beans, tomato, chili, powder, salt, and pepper. Bring mixture to a boil then remove.
  2. Layer tortillas, beef mixture, and cheese in pressure cooker. Continue this process until all ingredients are used.
  3. Set cooker to “slow cook”, cover, and cook for 4 hrs. Once finished, remove lid and serve.
