Dulce de Leche Cheesecake

Ingredients

  • 1 c shortbread cookies, crushed
  • 4 T butter, melted
  • 1 can dulce de leche
  • 16 oz cream cheese
  • 2 eggs
  • 1 egg yolk
  • 3 T flour

Directions

  1. In a bowl, mix cookies with butter to make the crust.
  2. Press the mixture into the springform pan.
  3. In a mixer, add cream cheese and mix until creamy.
  4. Add one egg at a time.
  5. While mixing slowly, add in the flour then the dulce de leche.
  6. Pour this mixture into the springform pan and cover with foil.
  7. Place a steamer rack into the cooker with 1c of water.
  8. Place the pan into the rack and close and lock the lid.
  9. Set to "bake" for 35 minutes.
  10. After cooking, let the cheesecake sit for 5 minutes, then perform a quick pressure release and make sure all pressure is released before opening the lid.
  11. Open. Carefully remove cheesecake from the cooker and let cool for 10 minutes. Serve and enjoy.
