Garden Vegetable Frittata

Ingredients
- 2T olive oil
- 6 small red potatoes, sliced
- 2c fresh spinach, torn
- 1 bunch green onions, sliced
- 1c grape tomatoes, sliced
- 1c asparagus, diced
- 1t garlic, crushed
- Salt and pepper, to taste
- 6 eggs
- 1⁄2c milk
- 1c Asiago cheese, shredded
Directions
- Heat the olive oil in a medium sauté pan on Medium (275°F).
- Add the potatoes to the pan, cover, and cook for 6–8 min.
- Uncover the pan and mix in the spinach, green onions, tomatoes, asparagus and garlic.
- Season the vegetables with salt and pepper and cook for 1–2 min. until the spinach is wilted.
- In a separate bowl, beat the eggs and milk together. Pour this into the sauté pan.
- Sprinkle the eggs with cheese and reduce the heat to Low (100°F). Cover the pan and cook for 5–7 minutes.
