Ingredients
- 2T olive oil

6 small red potatoes, sliced

2c fresh spinach, torn

1 bunch green onions, sliced

1c grape tomatoes, sliced

1c asparagus, diced
- 1t garlic, crushed
- Salt and pepper, to taste
- 6 eggs
- 1⁄2c milk
- 1c Asiago cheese, shredded
Directions
- Heat the olive oil in a medium sauté pan on Medium (275°F).
Add the potatoes to the pan, cover, and cook for 6–8 min.
Uncover the pan and mix in the spinach, green onions, tomatoes, asparagus and garlic.
Season the vegetables with salt and pepper and cook for 1–2 min. until the spinach is wilted.
In a separate bowl, beat the eggs and milk together. Pour this into the sauté pan.
Sprinkle the eggs with cheese and reduce the heat to Low (100°F). Cover the pan and cook for 5–7 minutes.
