Haddock with Potatoes

Ingredients

  • 2 T extra-virgin olive oil
  • 2 (8-oz) haddock fillets
  • 1 onion, diced
  • 1 carrot, peeled, diced
  • 3 red potatoes, peeled, diced
  • 2 cloves garlic, minced
  • 2 c water
  • Pinch of salt and pepper
  • Pinch of chili flakes
  • ½ c heavy cream
  • 1 c whole tomatoes
  • 1 T parsley
  • 1 T basil

Directions

  1. Set pressure cooker to "sear" and add oil. Add garlic and onion and sauté until tender. Add water, carrot, potatoes, and tomato and bring to a simmer. Add herbs and then place in steamer rack. Lay haddock on top of rack and season.
  2. Close and lock lid and set cooker to "fish" for 5 minutes. Press start/stop.
  3. When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and carefully remove the steamer rack.
  4. Remove some of the potatoes and veggies. With remaining ones, use an immersion blender and blend remaining potatoes and veggies to the chicken sauce.
  5. Add heavy cream to broth and allow to thicken for 7 minutes. Serve and enjoy.
