Ingredients
- 2 T extra-virgin olive oil
- 2 (8-oz) haddock fillets
- 1 onion, diced
- 1 carrot, peeled, diced
- 3 red potatoes, peeled, diced
- 2 cloves garlic, minced
- 2 c water
- Pinch of salt and pepper
- Pinch of chili flakes

½ c heavy cream
- 1 c whole tomatoes
- 1 T parsley
- 1 T basil
Directions
Set pressure cooker to "sear" and add oil. Add garlic and onion and sauté until tender. Add water, carrot, potatoes, and tomato and bring to a simmer. Add herbs and then place in steamer rack. Lay haddock on top of rack and season.
- Close and lock lid and set cooker to "fish" for 5 minutes. Press start/stop.
- When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and carefully remove the steamer rack.
- Remove some of the potatoes and veggies. With remaining ones, use an immersion blender and blend remaining potatoes and veggies to the chicken sauce.
- Add heavy cream to broth and allow to thicken for 7 minutes. Serve and enjoy.
