Ingredients

  • 3lbs boneless beef chuck roast, trimmed
  • 2T vegetable oil
  • Freshly ground black pepper
  • Pinch seasoned salt, to taste
  • Pinch onion powder, to taste
  • 14½oz beef broth
  • 1½T Worcestershire sauce
  • 1 large onion, cut into 4 wedges
  • 4 carrots, peeled, cut into bite-sized pieces
  • 4 large potatoes, peeled, cut into bite-sized pieces

Directions

  1. Set to "sear" and add oil.
  2. Add beef and brown the roast on all sides. Season with fresh ground pepper, seasoned salt, and onion powder.
  3. Pour in beef broth and Worcestershire sauce, and add quartered onions.
  4. Close lid and lock. Set to "meat/stew" and adjust for 30 minutes.
  5. When done, quick release until all pressure is released.
  6. Open and add carrots and potatoes.
  7. Close lid and lock. Set for an additional 15 minutes.
  8. When done, quick release until all pressure is released.
  9. Open. Remove roast and vegetables to serving dish.
