Ham Hock & Pinto Bean Soup

Ingredients

  • 1 ham hock
  • 1 yellow onion, thin sliced
  • 6 cloves garlic, crushed
  • 1 pinch oregano, dried
  • 2 bay leaves
  • 2 c pinto beans, drained
  • 5 c chicken stock
  • Sea Salt
  • Black Pepper

Directions

  1. Place all ingredients into the pressure cooker.
  2. Close and lock the lid. Set the pressure cooker to "soup", adjust the time for 45 minutes and press "start/stop".
  3. When done, allow the pressure cooker to naturally release.
  4. Before opening the lid, do a quick release to ensure all pressure has been released and it is safe to open. Carefully open the lid, taste the soup, and add salt and pepper, if needed.
  5. Ladle into serving bowls and enjoy.
