Ingredients

  • 1 T extra-virgin olive oil
  • 1 cloves garlic, minced
  • 1-½ lbs fresh mushrooms, sliced
  • 1 t Italian seasoning
  • 2 T fresh chives, mined
  • 2 T parsley, rough chop
  • ¼ c dry white wine
  • ¼ c vegetable stock
  • Sea salt
  • Freshly ground black pepper

Directions

  1. Set pressure cooker to "sear" and add oil. When hot, add garlic. Cook until fragrant. Add mushrooms, Italian seasoning, chives, parsley, vegetable stock, and wine.
  2. Close lid and lock. Set to "steam/veggies" and adjust for 2 minutes.
  3. When done, quick release and make sure all pressure is released before opening lid. Carefully open lid. Serve mushrooms hot.
