Ingredients
- 1 T extra-virgin olive oil
- 1 red onion, quartered
- 8 chicken drumsticks
- 2 sprigs thyme
- 6 cloves garlic, minced

Zest ½ lemon
- 2 Roma tomatoes, small dice
- Sea salt
- Black pepper
Directions
Set pressure cooker to "sear", add oil, and press "start/stop". When hot, add onion and a pinch of salt. Sauté 3 minutes. Add chicken drumsticks and sear on all sides. Add thyme, garlic, lemon zest, and tomatoes.
- Close and lock lid and set pressure cooker to "poultry". Adjust time to 12 minutes then press "start/stop". When done, quick release and make sure all pressure is released before opening lid.
- Carefully open lid and remove chicken. Check seasoning and add salt and pepper, if needed. Serve with rice, vegetables, or pasta.
