Ingredients

  • 5-lb pork roast, cut into 4-5 pieces
  • 1-½ c mojo criollo marinade
  • 2 T olive oil
  • 1 large onion, sliced thin
  • 2 carrots, small dice
  • 2 T olive oil
  • 1 lime, cut in half

Directions

  1. Place pork in a large resealable plastic bag and cover with marinade. Let pork marinate overnight, if possible.
  2. When ready to cook, set pressure cooker to "sear", add oil, and press "start/stop". When hot, add pork and brown sides.
  3. When browned, add marinade left in bag, onions, and carrots.
  4. Close and lock lid, set pressure cooker to "meat/stew", adjust time to 60 minutes, and press "start/stop".
  5. When done, natural release for 15 minutes, then do a quick release to make sure all pressure is released before opening lid. Carefully open lid and remove pork. Shred meat with forks. Serve with lime.
