Ingredients

• 1 box lemon cake mix
• 2 eggs
• ⅓ c vegetable oil
• Zest of 1 lemon
• Juice of 1 lemon
• ⅓ c powdered sugar

Directions

1. Mix eggs, oil, lemon zest, lemon juice, and cake mix in a large mixing bowl. Refrigerate dough for at least 30 minutes.
2. Roll dough balls 1T in size into powdered sugar. Coat well and place on a baking pan lined with parchment paper. Or, use Silicone Baking Pan. Bake for 7-9 minutes at 375°F.
3. Allow cookies to cool before serving.
