Lemon Bars

Ingredients
- ¾ c butter, unsalted, melted
- 2 large eggs, plus 1 egg yolk
- T lemon juice, freshly squeezed
- 1 T lemon zest
- 1 t lemon extract
- 1 c all-purpose flour
- 1 c sugar, granulated
- ¼ t baking powder
- ¼ t sea salt
- 1 c powdered sugar
- 2 T lemon juice, fresh
- 1 t lemon zest
Directions
- Line 9x9-inch baking pan with aluminum foil and lightly grease. Or, use Silicone Baking Pan. Preheat oven to 350°F.
- In a large mixing bowl, add butter, lemon juice, lemon zest, 2 whole eggs, plus 1 egg yolk, and lemon extract. Stir until combined.
- In a separate mixing bowl, add flour, sugar, baking powder, and salt. Stir until combined.
- Add dry ingredients to wet ingredients and stir until combined. Pour batter into prepared pan.
- Bake for 21-25 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Remove to a wire rack to cool.
- In a medium saucepan, add powdered sugar, lemon juice, and lemon zest. Heat over medium-low heat until sugar dissolves and a smooth liquid is formed.
- Pour glaze over lemon bars, cut, and serve.
