Ingredients
- ¾ c butter, unsalted, melted
- 2 large eggs, plus 1 egg yolk
- T lemon juice, freshly squeezed
- 1 T lemon zest
- 1 t lemon extract

- 1 c sugar, granulated
- ¼ t baking powder

For Lemon Bars
- Line 9x9-inch baking pan with aluminum foil and lightly grease. Or, use Silicone Baking Pan. Preheat oven to 350°F.
In a large mixing bowl, add butter, lemon juice, lemon zest, 2 whole eggs, plus 1 egg yolk, and lemon extract. Stir until combined.
In a separate mixing bowl, add flour, sugar, baking powder, and salt. Stir until combined.
Add dry ingredients to wet ingredients and stir until combined. Pour batter into prepared pan.
Bake for 21-25 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Remove to a wire rack to cool.
Lemon Glaze
- In a medium saucepan, add powdered sugar, lemon juice, and lemon zest. Heat over medium-low heat until sugar dissolves and a smooth liquid is formed.
- Pour glaze over lemon bars, cut, and serve.
