Lemon Olive Chicken

Ingredients

  • 4 chicken breasts, bone-in
  • 2 t sea salt
  • 1 t black pepper
  • ½ t cumin
  • ½ c butter
  • Juice of lemon
  • 1 c chicken stock
  • 1 (12-oz) can green olives, halved
  • 1 red onion, thin sliced

Directions

  1. Season chicken with salt, pepper, and cumin. Set pressure cooker to "sear", add butter, and press "start/stop". When melted, add chicken and cook, about 3 minutes per side. Add lemon juice, chicken stock, green olives, and red onions, and bring to a simmer.
  2. Close and lock lid, set pressure cooker to "poultry", adjust time to 10 minutes, then press "start/stop". When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and check seasoning. Add salt and pepper, if needed and serve.
