Lemon Salmon with Mango Salsa

Ingredients
- 4 (6-ounce) salmon filets
- 2T lemon juice
- 1T olive oil
- 1T grated lemon zest
- 2t Dijon mustard
- ½t black pepper
- 1 ripe mango, peeled and diced
- 2 green onions, finely chopped
- ¼c red bell pepper, chopped
- 2T fresh cilantro, chopped
- 2T lime juice
Directions
- In a small bowl, whisk together lemon juice, olive oil, lemon zest, mustard and pepper.
- Place the fish in a baking dish and pour the marinade over the fish.
- Marinate and refrigerate for 20 minutes.
- While the fish is marinated, mix all the ingredients together in a small bowl; refrigerate until it is ready to serve.
- Place the salmon on 3-inch rack and cook at 350ºF for 5-6 minutes per side.
- Pour the mango salsa over the salmon and serve.
