Lemon Salmon with Mango Salsa

Ingredients

  • 4 (6-ounce) salmon filets
  • 2T lemon juice
  • 1T olive oil
  • 1T grated lemon zest
  • 2t Dijon mustard
  • ½t black pepper
  • 1 ripe mango, peeled and diced
  • 2 green onions, finely chopped
  • ¼c red bell pepper, chopped
  • 2T fresh cilantro, chopped
  • 2T lime juice

Directions

  1. In a small bowl, whisk together lemon juice, olive oil, lemon zest, mustard and pepper.
  2. Place the fish in a baking dish and pour the marinade over the fish.
  3. Marinate and refrigerate for 20 minutes.
  4. While the fish is marinated, mix all the ingredients together in a small bowl; refrigerate until it is ready to serve.
  5. Place the salmon on 3-inch rack and cook at 350ºF for 5-6 minutes per side.
  6. Pour the mango salsa over the salmon and serve.
