Plunger Lid ONLY
Ingredients
- 3 lobster tails, in shells
- 1 T olive oil
- 2 shallots, chopped
- 1 yellow onion, diced
- 3 cloves garlic, minced

½ t hot sauce
- Pinch of salt and pepper

⅓ C low-sodium chicken stock
- 1 T tomato paste
- 1 t paprika
- 1 C coconut milk
Directions
- Fill a pot halfway with water and bring to a boil.
- Once boiling, add lobster tails and boil for 8-10 minutes, Remove lobster from the boiling water and allow to cool.
- Using 2C of the water the lobster was boiled in, add paprika, tomato paste, and combine in the jar.
- Add onions, hot sauce, garlic, stock, shallots, and oil.
Using the plunger lid, set blender to "Soup" and blend for 5 minutes.
- Slowly add in the coconut milk and lobster meat during the last minute of blending.
- Season with salt and pepper.
- Serve and enjoy.
