Mashed Sweet Potatoes

Ingredients

  • 1 c water
  • 2 lbs sweet potatoes, peeled, 2-to 3-inch cubes
  • 3 T unsalted butter
  • 2 T maple syrup
  • ¼ t nutmeg
  • Sea salt

Directions

  1. Pour water into cooker. Place steamer rack in bottom of cooker. Place potato chunks on rack.
  2. Close and lock lid, set pressure cooker to "potatoes", adjust time to 8 minutes, and press "start/stop".
  3. When done, quick release pressure and make sure all pressure is released before opening lid.
  4. Carefully open lid and remove sweet potatoes. Transfer to large bowl. Use a masher to mash the potatoes.
  5. Add nutmeg, butter, and maple syrup. Mix well. Season to taste with sea salt. Serve and enjoy.
