Meaty Spaghetti Sauce

Ingredients

  • 1 T extra-virgin olive oil
  • 1 onion, small dice
  • 1 green pepper, small dice
  • 4 cloves garlic, minced
  • 2 lbs beef, ground
  • 1 c tomato paste
  • 4 c tomato sauce
  • 3 c tomatoes, diced
  • ¼ c sugar
  • 2 T oregano, dried
  • Sea salt
  • Black pepper

Directions

  1. Set pressure cooker to "sear", adjust time to 15 minutes, press "start/stop", and add oil. When oil is hot, add onion, green pepper, and garlic. Sauté for 1 minute then add beef and brown, about 8-10 minutes.
  2. Add remaining ingredients. Stir. Close and lock lid and set pressure cooker to "soup". Adjust time to 20 minutes and press "start/stop".
  3. When done, do a quick release and make sure all pressure is released before opening the lid.
  4. Carefully open the lid and check the sauce for seasoning. Add salt and pepper, if needed.
