Orange Chicken

Ingredients
- 4 chicken breasts, boneless, skinless, diced
- ¼c soy sauce
- ¼c water
- 2T brown sugar
- 1T rice wine vinegar
- 1t sesame oil
- ¼t chili sauce
- ½c orange marmalade
- 3T cornstarch
- 2 green onions, chopped
Directions
- Set to "sear" and add sesame oil.
- When oil is hot, add chicken, soy sauce, brown sugar, vinegar, and chili sauce. Stir.
- Close lid and lock. Set to "poultry" and adjust for 5 minutes.
- When done, quick release until all pressure is released.
- Open and add marmalade. Stir.
- Add cornstarch and water to thicken sauce.
- Plate, top with green onions, and serve.
- Serve orange chicken with a rice pilaf.
