Orange Cranberry Cookies

Ingredients

  • 1 c sugar
  • ¾ c butter, unsalted, softened
  • 1 egg
  • 2 c all-purpose flour
  • 1½ t baking powder
  • ¼ t baking soda
  • ½ c dried cranberries, chopped
  • 1 T orange peel, freshly grated
  • ⅓ c sugar, granulated
  • 1 t orange peel, freshly zested

Directions

  1. Preheat oven to 350°F. Combine all sugar mixture ingredients in small bowl. Stir until well mixed; set aside.
  2. In a separate bowl, using an electric mixer, combine sugar, butter, and egg. Beat until creamy.
  3. Reduce speed and add flour, baking powder, and baking soda. Beat until mixed well.
  4. Add remaining ingredients. Beat until combined.
  5. Shape cookies into 1-inch-sized balls and roll in reserved sugar mixture. Place 2 inches apart on ungreased baking pan.
  6. Bake for 6 to 10 minutes or until edges are light brown. Cool for 1 minute. Remove to a wire rack to cool completely.
