Ingredients
- 2T grapeseed oil
- 4 halibut fillets, 6oz. each
- 1T salt
- 1T cracked black pepper
- 2 sprigs fresh thyme

Juice from 1 lemon, divided

1T olive oil

11⁄2c halved heirloom tomatoes

1t chopped garlic
- 2T chopped parsley
Directions
Heat the grapeseed oil in a large sauté pan on Medium-High (375°F).
Season the fish with salt and pepper and place it in the hot pan to cook for 3–4 min. per side.
Combine the thyme with 1⁄2 of the lemon juice in a small bowl. Baste fish with this mixture.
Transfer the fish to a serving platter to rest.
Add olive oil to the same pan used to cook the fish and stir in the tomatoes, garlic, and the remaining lemon juice.
Cook the sauce for 2 minutes.
Stir in the parsley and pour the sauce over the fish.

This recipe works great with any type of white-fleshed fish.
