Batter-Fried Shrimp

Ingredients
- 2lbs. uncooked shrimp, peeled and deveined, with tails
- 1c all-purpose flour
- 1⁄2t sugar
- 1⁄2t salt
- 1c ice water
- 1 egg
- 1 large bottle vegetable oil, divided into 6c and 2T portions
Directions
- Heat 6c of oil in a large stock pot on Medium (350°F).
- In a large bowl, mix the flour, sugar, and salt.
- Add the ice water, egg, and 2T of oil to the flour mixture to make a batter.
- Dry the shrimp thoroughly.
- Holding the shrimp by the tail with tongs, dip each shrimp into the batter and then carefully place it in the pot to fry for about 2 min. or until golden brown.
- Transfer each fried shrimp to paper towels to drain and keep them warm as you cook the remaining shrimp.
- Serve immediately.
