Ingredients

  • 2T extra-virgin olive oil
  • 2 yellow onions, halved
  • 1T ginger, sliced
  • 1 small bunch cilantro
  • 2 star anise
  • 1 cinnamon stick
  • 4 whole cloves
  • 1t fennel seed
  • 1t coriander seeds
  • 6 chicken drumsticks
  • ¼c fish sauce
  • 2T sugar
  • 4 servings pho noodles
  • 1 yellow onion, sliced thin
  • ⅓c scallions, sliced
  • 2c trimmed bean sprouts
  • 1 lime, cut into wedges
  • Hoisin or Sriracha sauce

Directions

  1. Set to "sear" and add oil.
  2. Add onions and ginger and cook for 5 minutes.
  3. Add in cilantro, star anise, cinnamon, cloves, fennel, coriander, and chicken drumsticks.
  4. Pour in 2 quarts of water, and add fish sauce and sugar.
  5. Close lid and lock. Set to "poultry" and adjust for 20 minutes.
  6. When done, quick release until all pressure is released.
  7. Open and remove chicken legs. Strain broth into a bowl, removing any solids.
  8. Season broth to taste with more fish sauce and sugar, if needed.
  9. Place noodles in bowl, pour hot broth over noodles.
  10. Add a chicken leg, and garnish with bean sprouts, onions, scallions, and your choice of hoisin or Sriracha sauce.
