Ingredients
- 2T extra-virgin olive oil
- 2 yellow onions, halved
- 1T ginger, sliced
- 1 small bunch cilantro
- 2 star anise
- 1 cinnamon stick
- 4 whole cloves
- 1t fennel seed
- 1t coriander seeds
- 6 chicken drumsticks

¼c fish sauce
- 2T sugar
- 4 servings pho noodles
- 1 yellow onion, sliced thin

⅓c scallions, sliced
- 2c trimmed bean sprouts
- 1 lime, cut into wedges
- Hoisin or Sriracha sauce
For Serving
Directions
- Set to "sear" and add oil.
- Add onions and ginger and cook for 5 minutes.
- Add in cilantro, star anise, cinnamon, cloves, fennel, coriander, and chicken drumsticks.
- Pour in 2 quarts of water, and add fish sauce and sugar.
- Close lid and lock. Set to "poultry" and adjust for 20 minutes.
- When done, quick release until all pressure is released.
- Open and remove chicken legs. Strain broth into a bowl, removing any solids.
- Season broth to taste with more fish sauce and sugar, if needed.
- Place noodles in bowl, pour hot broth over noodles.
- Add a chicken leg, and garnish with bean sprouts, onions, scallions, and your choice of hoisin or Sriracha sauce.
