Ingredients
- 1 lb shrimp, peeled, deveined
- 12 oz quinoa

½ c pineapple juice

¼ c white wine
- 1 bell pepper, julienne
- 2 T soy sauce
- 2 T sweet chili sauce
- 2 T chili paste
- 2 c pineapple chunks
- 6 scallions, thin slice
Directions
- Add all ingredients to pressure cooker except pineapple and scallions.
- Close and lock lid, set pressure cooker to "fish", adjust time to 2 minutes, and press "start/stop".
- When done, quick release and make sure all pressure has been released before opening lid. Carefully open lid and add pineapple and scallions and mix. Spoon into serving dishes and serve.
