Ingredients
- 1⁄4t ground coriander
- 1⁄4t black pepper, freshly ground
- 1⁄8t ground cinnamon
- 1⁄8t ground nutmeg
- 1⁄2t salt, as needed.

1lb. pork tenderloin, trimmed and cut crosswise into 12 pieces
- Non-stick cooking spray
- 2T butter
- 2c thinly sliced, unpeeled apples, seeds and core removed
- 1⁄3c thinly sliced shallots
- 1⁄4c apple cider
- 1t fresh thyme leaves
Directions
- Combine first 4 ingredients with salt, as needed, in a bowl and sprinkle the seasoning evenly over the pork tenderloin.
- Coat a large sauté pan with non-stick cooking spray and heat it on Medium-High (375°F).
Add the pork to the pan and cook it for 3 min. per side. Remove the pork from the pan and keep it warm.
- Reduce the temperature to Medium (275°F).
Melt the butter in the pan and add the apple slices, shallots and salt, as needed. Sauté for 4 min.
- Add apple cider to the pan, continue cooking for 2 minutes, then stir in the thyme.
- Serve the pork with apples.
