Ingredients
- 2 T extra-virgin olive oil
- 2 T garlic, minced
- 1 T ginger, minced
- 1 tomato, diced
- 1 t turmeric
- Pinch of salt and pepper
- 1 t chili powder
- 8 oz pumpkin, diced
- 6 c water
- 2 c split lentils, washed and drained

½ lime, juiced
Directions
- Set pressure cooker to "sear", add oil, and brown ginger, garlic, and tomato. Add dry spices, water, lentils, and pumpkin.
- Set pressure cooker to "slow cook" and cover with glass lid. Cook for 2 hrs.
- Carefully remove lid and squeeze lime over the top. Season with salt and pepper. Serve and enjoy.
