Ingredients

  • 2 T extra-virgin olive oil
  • 2 T garlic, minced
  • 1 T ginger, minced
  • 1 tomato, diced
  • 1 t turmeric
  • Pinch of salt and pepper
  • 1 t chili powder
  • 8 oz pumpkin, diced
  • 6 c water
  • 2 c split lentils, washed and drained
  • ½ lime, juiced

Directions

  1. Set pressure cooker to "sear", add oil, and brown ginger, garlic, and tomato. Add dry spices, water, lentils, and pumpkin.
  2. Set pressure cooker to "slow cook" and cover with glass lid. Cook for 2 hrs.
  3. Carefully remove lid and squeeze lime over the top. Season with salt and pepper. Serve and enjoy.
