Ingredients
- 2 Cornish hens
- 1 yellow onion, quartered
- 4 stalks celery, large dice
- 3 T extra-virgin olive oil
- Sea salt, as needed

Freshly ground black pepper, as needed

4 cloves garlic
- 2 T chili powder
- 4 T parsley, chopped
Garnish
Directions
In a small bowl, combine all dry ingredients.
Rub hens with oil and season with dry seasoning mixture.
Stuff the cavities with onion, celery, and garlic.
Place hens onto Baking Pan and place onto the Cooking Rack in slot 1.
Set Bravo to “Roast” at 375 ̊F for 45 minutes.
Using a handheld meat thermometer, check to see that an internal temperature of 165°F has been reached. When done, carefully remove hens and let rest for 5 minutes.
Garnish with parsley and serve.
