Roasted Cornish Hens

Ingredients
- 2 Cornish hens
- 1 yellow onion, quartered
- 4 stalks celery, large dice
- 3 T extra-virgin olive oil
- Sea salt, as needed
- Freshly ground black pepper, as needed
- 4 cloves garlic
- 2 T chili powder
- 4 T parsley, chopped
Directions
- In a small bowl, combine all dry ingredients.
- Rub hens with oil and season with dry seasoning mixture.
- Stuff the cavities with onion, celery, and garlic.
- Place hens onto Baking Pan and place onto the Cooking Rack in slot 1.
- Set Bravo to “Roast” at 375 ̊F for 45 minutes.
- Using a handheld meat thermometer, check to see that an internal temperature of 165°F has been reached. When done, carefully remove hens and let rest for 5 minutes.
- Garnish with parsley and serve.
