Salted Caramel Chocolate Chip Cookie Bars

Ingredients
- 1 c butter, unsalted, softened
- 1 c light brown sugar, packed
- ½ c sugar, granulated
- 2 large eggs
- 1 t vanilla extract
- 1 t sea salt
- 1 t baking soda
- 2½ c all-purpose flour
- 2 c semisweet chocolate chips
- 1(14-oz) can sweetened condensed milk
- 10 oz soft caramels, unwrapped
- 1t sea salt, flaked
- Cooking spray
Directions
- Preheat oven to 350°F. Line a 9x9-inch baking dish with foil and coat with cooking spray.
- In a large mixing bowl, using an electric mixer, beat butter with both sugars until light and fluffy, about 2 minutes. Add eggs, vanilla, salt, and baking soda. Mix well, then scrape the sides of the bowl with a spatula.
- Turn speed to low and add flour. Beat to combine, and then mix in the chocolate chips.
- Press half of cookie dough into the bottom of prepared baking dish.
- In a medium saucepan, add sweetened condensed milk and caramels. Set over medium-low heat and stir until the caramels melt, making a smooth caramel filling. Pour the filling over the cookie dough base.
- Add the remaining cookie dough over caramel filling in small clumps, 1t in size. Bake for 22-27 min. or until the center is just set.
- Sprinkle with sea salt flakes. Allow to cool completely. Lift out of the pan by the edges of the foil. Cut into bars.
