Salted Caramel Chocolate Chip Cookie Bars

Ingredients

  • 1 c butter, unsalted, softened
  • 1 c light brown sugar, packed
  • ½ c sugar, granulated
  • 2 large eggs
  • 1 t vanilla extract
  • 1 t sea salt
  • 1 t baking soda
  • 2½ c all-purpose flour
  • 2 c semisweet chocolate chips
  • 1(14-oz) can sweetened condensed milk
  • 10 oz soft caramels, unwrapped
  • 1t sea salt, flaked
  • Cooking spray

Directions

  1. Preheat oven to 350°F. Line a 9x9-inch baking dish with foil and coat with cooking spray.
  2. In a large mixing bowl, using an electric mixer, beat butter with both sugars until light and fluffy, about 2 minutes. Add eggs, vanilla, salt, and baking soda. Mix well, then scrape the sides of the bowl with a spatula.
  3. Turn speed to low and add flour. Beat to combine, and then mix in the chocolate chips.
  4. Press half of cookie dough into the bottom of prepared baking dish.
  5. In a medium saucepan, add sweetened condensed milk and caramels. Set over medium-low heat and stir until the caramels melt, making a smooth caramel filling. Pour the filling over the cookie dough base.
  6. Add the remaining cookie dough over caramel filling in small clumps, 1t in size. Bake for 22-27 min. or until the center is just set.
  7. Sprinkle with sea salt flakes. Allow to cool completely. Lift out of the pan by the edges of the foil. Cut into bars.
