Shrimp Paella

Ingredients

  • 1 lb shrimp, tail-on
  • 1 c white rice
  • 4 T butter
  • 2 cloves garlic, minced
  • 1-½ c chicken stock
  • 1 t paprika
  • Pinch of salt and pepper
  • 1 pinch of saffron
  • ⅓ T chili flakes
  • 2 scallions, sliced

Directions

  1. Set pressure cooker to "sear". Add butter and garlic and brown. Add salt, pepper, paprika, chili flakes, and saffron. Add shrimp and cook for 2 minutes. Add rice and chicken stock
  2. Close and lock the lid and set to "fish" and adjust for 5 minutes.
  3. When done, quick release and make sure all pressure is released before opening lid and stir. Garnish with scallion. Serve and enjoy.
