Shrimp and Vegetable Tempura

Ingredients

  • 1 cup flour
  • 2½ teaspoons baking powder
  • Salt and pepper to taste
  • 1 cup cold water
  • 6 cups oil
  • 5 shrimp
  • 3 mini red peppers
  • 1 eggplant, sliced
  • 4 mini carrots
  • 4 cauliflower florets
  • 4 broccoli florets

Directions

  1. Mix flour, baking powder, salt and pepper together in bowl.
  2. Add cold water and whisk until smooth, set aside.
  3. Add oil to 3.5-quart pot and heat on Medium-High (375°F) for 5 minutes.
  4. Skewer shrimp and vegetables on fondue forks and coat in prepared batter.
  5. Place shrimp and vegetables in hot oil, with fondue forks sticking out, and cook for 4-5 minutes.
  6. Garnish with salt and enjoy.
