Sous Vide New York Steaks

Ingredients
- 2 New York Steaks, 16oz. each
- 4T vegetable oil, divided
- Sea salt and freshly ground black pepper, as needed
- 2 sprigs thyme, fresh, leave on the stem
Directions
- Press PRESET and use the START/PAUSE dial to select from PRESETS: • Rare - 22 • Medium-rare - 23 • Medium -24 • Medium-well - 25 • Well-done - 26 (LineB) Place air fry rack on rack position 2, and baking tray on rack position 1.
- While preheating, heat a fry pan on the stove, set to high, add 2T oil to pan, season the steaks with salt and pepper.
- When the pan is hot, add steaks and sear on all sides for 2-1/2 minutes. Remove when browned evenly, onto a plate.
- Once oven is preheated, place steaks on air fry rack and begin cooking for 1 hour 30 minutes. When the time is finished, the unit will beep three times and display “End”.
- Place a fry pan on stove again, set to high, add 2T oil to pan, once pan is hot, add thyme and steaks.
- Sear steaks again to give a crisp char. Sear all sides of the steak for a total of 2 1/2 minutes, and season with salt and pepper if need.
- Once evenly charred, remove steaks, serve and enjoy.
