Ingredients
- 2 T extra-virgin olive oil
- 1 lb beef stew meat
- 1 yellow onion, diced
- 1 t garlic, minced
- 2 jalapeños, minced
- 1 whole bay leaf
- 1 t cumin
- 1 t paprika
- Pinch of salt and pepper
- 1 c beef stock
- ⅓ c tomato sauce
Directions
- Set pressure cooker to "sear" and add oil and beef. Once meat is browned, add onions, garlic, jalapeños, bay leaf, and dry spices. Add beef stock and tomato sauce.
- Close and lock the lid, cook on "meat/stew", and adjust for 30 minutes.
- When done, quick release and make sure all pressure is released before opening lid.
- Open cooker and thicken sauce with your thickener of choice. Serve and enjoy.
