Ingredients
- 2 T extra-virgin olive oil
- 1 lb beef stew meat
- 1 yellow onion, diced
- 1 t garlic, minced

2 jalapeños, minced
- 1 whole bay leaf
- 1 t cumin
- 1 t paprika
- Pinch of salt and pepper
- 1 c beef stock

⅓ c tomato sauce
Directions
Set pressure cooker to "sear" and add oil and beef. Once meat is browned, add onions, garlic, jalapeños, bay leaf, and dry spices. Add beef stock and tomato sauce.
- Close and lock the lid, cook on "meat/stew", and adjust for 30 minutes.
- When done, quick release and make sure all pressure is released before opening lid.
Open cooker and thicken sauce with your thickener of choice. Serve and enjoy.
