Ingredients

2 medium baked potatoes

1/4 cup sour cream

1 packet ranch seasoning

1c Cheddar cheese, shredded

Green onions, sliced

Bacon pieces, cooking, optional
Directions
Bake potatoes on a 1-inch rack at 350F for 1 hour.
Let it cool for 5 minutes.
Cut the potatoes lengthwise and scoop out the filling from the skins.
Combine the potato filling with sour cream and seasoning mix.
Fill the skins with mixture and sprinkle with cheese.
Place the skins on a 3-inch rack and bake at 350 for 5 minutes, or until the cheese is melted.
Add the green onions and bacon.
