Tomato Basil Bisque
- 2 (28-oz) cans peeled tomatoes
- 1 bunch basil, leaves only
- 1 clove garlic
- Sea salt to taste
- 1 T red wine
- 2 T extra-virgin olive oil
- Pinch sugar
- 2 T mascarpone cheese
- Add tomato, garlic, red wine, sugar, and oil to blender jar.
- Set blender to 10 and blend for 6 minutes.
- Add basil and mascarpone and blend on the same setting for 1 additional minute.
- Season with sea salt and serve with crusty Italian bread.
