Ingredients

  • ½ c vegetable oil
  • ⅓ c flour
  • 1 c onions, small dice
  • 1 c green bell peppers, small dice
  • 2 c carrots, peeled, small dice
  • 1 c celery stalks, small dice
  • 2 c green beans, trimmed
  • 1 (28-oz) can diced tomatoes
  • 1 c parsnip, peeled, small dice
  • 1 c frozen okra
  • 1 T ground cumin
  • 1 T paprika
  • 1 T oregano, dried
  • ½ t cayenne pepper
  • 4 c water
  • Sea salt
  • Black pepper

Directions

  1. Set to "sear" and add oil and flour. Cook until roux turns dark color, stirring constantly.
  2. Add onions, bell peppers, carrot and celery and cook 5 minutes. Stir in all remaining ingredients and water. Add sea salt and fresh ground black pepper. Close lid, set to "soup", and adjust for 3 minutes. Once done, do a quick release and make sure all pressure is released before opening lid. Open. Taste for seasoning. If necessary, add more sea salt. Serve hot.
